Our Commitment to Sustainability

Our Geothermal line has been awarded the GeoFood logo through the UNESCO GeoPark. This guarantees that at least 75% of our produce comes from within the archipelago, massively reducing our food miles while supporting local producers. For most of our menus we arrive at much closer to 95% and we are fully committed to supporting our small, local producers from each one of the islands, preferring the best products that we are able to serve when they are available and accepting that sometimes they are not. We work on a theory of circular economy with all of our food and eggshell waste going back to those carefully selected producers where they are needed most and will contribute most to the producer and the environment.

Water is the substance that defines what we do and is a constant theme for us. Through our water tastings and other services using waters, we aim to educate our clients on what the real meaning of clean water is. With our backgrounds in microbiology, biochemistry and toxicology that extend way beyond just drinking water, we are in a unique position to be able to do that. We work very closely with our collaborators in the mineral water industry together with suppliers who use mineral waters for different goals. We also have provided our specialist advice to other companies who use the thermal waters commercially.
